This is going to be long, sorry...too many questions.
I have a Necky Zoar Sport (a 14ft sit inside) and I also own a conoe, a 15 ft Royalex tandem.
I have fished from the kayak but I honestly use the canoe more for fishing and the kayak more for exploring/touring/camping.
My problem is that the canoe limits a lot the choices of places that I have the guts to venture. On the other hand I go everywere with the kayak, but not always for fishing.
When rigging the kayak, I took a very minimalistic approach: I placed two pieces of PVC pipe, one fore, one aft of the cockpit on each side and place my rods there, one at each side. With this set-up I end up with two problems: it interferes with my paddling and the reels get wet all the time (I always wash and lube them but they are not supposed to be kept that wet). I carry a small tackle box in the cockpit and release everything I catch when in the kayak. I do a lot of catch and release normally , but I would not release everything - because I don't have a way to bring a cooler, I have no means to bring home fresh fish caught from the kayak, as I do when using the canoe.
I was wondering if anyone else was using SIK and I am very interested in learning how you guys rig them, because, my solution is really plain bad.
I am about to buy another boat. I am very inclined towards a SOT (I'm thinking about the Dolphin from Necky, I will test paddle some boats before buying) wich would solve many of the problems I have today, but still, I feel that I could do much more from the SIK, I just have no clue how to take more in terms of "fishability" out of that boat.
